Walnut paste

Peanut butter for grown ups. Double quantities for More. Perfect for the snacky start to a lekker party. Or for feeding yourself while you watch the start of a movie and supper's still in the oven.

1 cup walnuts (taste them, they must be fresh. Yes I think pecans can work, too)
2 cloves garlic
1/4 cup EV olive oil
2 Tbsp pomegranate molasses (or lemon juice and 1 tsp sugar)
2 Tbsp water

I have a blender. A food processor is what you need. Whoosh everything up, scraping the sides down and re-whooshing till it is smooth. Serve on crackers, or bits of back-in-the-day Melba toast.

If you are very patient and a purist, stomp it all together in a mortar, using chopped nuts to make your life a little more bearable, and starting with the garlic, waiting to add nuts until the garlic is quite creamy.
